One Pan Mince - 3 Ways

Dinner/Lunch • 40 Minutes • Serves: 4 • Cost: $17.50 ($4.40 Per Serve)

One pan mince that you can prep at the beginning of the week and then use for 3 different meals over the week! A great idea for busy people who are short on time to cook throughout the week. A variety of different plants which is beneficial for your gut health and mood. High in protein to support maintaining muscle strength. 


INGREDIENTS

One Pan Mince:

  • 500g lean beef mince 
  • 2 tbsp extra virgin olive oil 
  • 1 onion, finely chopped 
  • 3 garlic cloves, peeled and crushed 
  • 1 red chilli, diced
  • 2 tbsp taco seasoning 
  • 400g tin chopped tomatoes 
  • 120mL water 
  • 400g canned kidney beans, drained

Meal 1 - Jacket Potato: 

  • 1 medium-sized baking potato 
  • ½ tbsp olive oil 
  • ¼ cup of cheese

Meal 2 - Nachos:

  • 1 cup of tortilla chips 
  • ¼ cup of shredded cheese 
  • ¼ avocado (diced) 
  • ½ tomato (diced) 
  • 1 tbsp sour cream
  • 2 tbsp cilantro (diced)

Meal 3 - Burrito Bowl:

  • 2 tbsp taco sauce 
  • ¼ cup cherry tomatoes (quartered) 
  • ¼ red onion (diced) 
  • ½ cucumber (chopped) 
  • 1 cup shredded lettuce 
  • ¼ cup of canned corn 
  • ¼ cup shredded cheese 
  • ¼ avocado
  • 1 tbsp sour cream 
  • 1 (~125g) microwavable rice cup 
  • ½ lime 

METHOD

One Pan Mince

  1. Heat a tablespoon of oil in a large saucepan over a medium heat. Add the onion and garlic and cook gently for about 10 minutes until softened. 
  2. In the same pan heat the remaining oil, add the mince and fry until brown. 
  3. Once brown, add the taco seasoning, chopped tomatoes, chilli and water. Mix well together. Season with salt and black pepper. 
  4. Bring to a simmer then turn the heat down and cook for 30 minutes, stirring occasionally. 
  5. Add the beans. Leave the saucepan on a low heat for another 10 minutes for the beans to heat through

Meal 1 - Jacket Potato

  1. Preheat the oven to 200°C. Rub potato with olive oil and season with sea salt, then use a fork to pierce it six times, all around the potato. 
  2. Wrap the potato in foil and place on a baking tray and bake for 1 hour, until the potato is soft on the inside. 
  3. Top with your beef mince filling and cheese. Put back in to the oven until the cheese has melted.

Meal 2 - Nachos

  1. Arrange the tortilla chips in a single layer. Toast the chips in the preheated oven for 5 minutes. 
  2. Carefully remove the pan from the oven and top with the beef and bean mixture. 
  3. Sprinkle the cheese over the beef and return the pan to the oven for 5 minutes, or until the cheese has melted. 
  4. Top the nachos with the avocado, sour cream, tomato and cilantro or any of your preferred toppings. Serve hot.

Meal 3 - Burrito Bowl

  1. Make a salsa by mixing the cherry tomatoes, red onion and cucumber. 
  2. In a bowl add the microwave rice, shredded lettuce, corn, homemade salsa, taco sauce, beef mixture. 
  3. Top with grated cheese, chunks of avocado, a squeeze of lime and add a dollop of sour cream.
