Healthy Gnocchi Tray Bake with Winter Veggies and White Beans

This dinner does more than fill you up — it helps you glow from the inside out. Brussels sprouts and spinach are packed with antioxidants that fight off skin-dulling stress and help your body clear out toxins. White beans give your brain and body the magnesium and plant protein they crave — think better mood, better sleep, and less tension.

Fun Fact:

Brussels sprouts are rich in antioxidants like kaempferol, which helps protect your skin, supports brain health, and keeps inflammation down.

Ingredients

  • 500g fresh or store-bought gnocchi (whole-wheat or cauliflower gnocchi for a healthier option)
  • 1 cup Brussels sprouts, thinly sliced
  • 2 cups pumpkin, in small bite sized pieced
  • 1 red onion, diced
  • 2 cups  spinach
  • 1 can (400g) white beans, drained and rinsed (e.g., cannellini)
  • 2 tbsp olive oil
  • 2 tsp dried Italian herbs
  • 1/2 tsp garlic powder (or 1–2 cloves garlic, minced)
  • 1 cup passata or crushed tomatoes
  • 1 tbsp balsamic vinegar
  • Salt and pepper to taste
  • 1/4 cup grated parmesan
  • 1/4 cup cheddar/mozzarella cheese

Method

1. Preheat the oven to 190°C 

2. Prepare the veggies:
Chop the pumpkin, slice the Brussels sprouts, and dice the onion.

3. Toss veggies:
In a baking dish, toss the chopped veggies with olive oil, Italian herbs, garlic powder, salt, and pepper.

4. Roast veggies:
Roast for 20–25 minutes until tender and beginning to caramelise.

5. Cook the gnocchi:
Boil according to package instructions (2–3 mins until they float). Drain and set aside.

6. Combine and mix:
Remove dish from oven. Add cooked gnocchi, spinach, white beans, passata/crushed tomatoes and balsamic vinegar. Toss gently to coat everything evenly.

7. Top with cheese
Sprinkle with cheeses.

8. Final bake:
Return dish to oven and bake 10–15 minutes, until cheese is melted and bubbling.

9. Serve:

Let cool slightly before serving. Enjoy on its own or with a simple side salad.
