Prep these mini quiches at the beginning of the week for a healthy, satisfying snack. Filled with fibre from your favourite vegetables. They're also a great option to have as a ready-made breakfast. A snack portion would be 1-2 of these quiches, whereas for breakfast try having 3-4 to start your day.
Ingredients
- 6 large egg
- 130 mL cream
- 1/2 onion (diced)
- 2.5 sheets puff pastry
- 1 cup cheese (grated)
- Vegetables of your choice (finely diced): spinach, mushrooms, capsicum
Method
- Preheat oven to 210C.
- Grease muffin pan.
- Using a fork or whisk, beat eggs, cream, onion, and salt and pepper in a bowl until well-combined.
- In another bowl, combine vegetables.
- Cut and line each muffin hole with pastry. Bake for 5-8 minutes.
- Divide vegetables and cheese into muffin holes, and spoon in egg mixture.
- Bake for 20-22 minutes.
