Heart-Healthy Breakfast Cereal

WITH Sarah McCarthy

Breakfast • 15 Minutes • Serves: 4 • Cost: $7.00 ($1.75 per Serve)

Eating a tasty, nutritious breakfast is a great way to help kick-start your day the best way you can. With the 2 Cholesterol-Lowering Weetbix biscuits per serving, they hit the recommendation of plant sterols shown to reduce the bad cholesterol. Ensure to choose the ‘Cholesterol-Lowering’ Weetbix instead of the regular to receive the added plant sterols for a healthy heart. Make this big batch of cereal for the week ahead, store in an airtight container for up to 4 weeks.

INGREDIENTS

  • 8 Cholesterol-Lowering Weetbix (crushed)
  • ½ cup dried fruit, roughly chopped (e.g. dried cranberries)
  • ½ cup mixed unsalted nuts, roughly chopped (e.g. almonds, walnuts)
  • ¼ cup flaxseeds

METHOD

  1. Preheat your oven to 180°C.
  2. Crush the Weetbix biscuits into small pieces in a large mixing bowl.
  3. In another bowl, add the nuts and flaxseeds.
  4. Mix in the dried fruits to the nuts.
  5. Spread the nut/seed/dried fruit mixture on a baking sheet lined with baking paper.
  6. Bake the mixture in the preheated oven for about 10 minutes, or until the almonds and seeds are lightly toasted.
  7. Once the mixture is done baking, remove it from the oven and let it cool completely on the baking sheet.
  8. Once cooled, mix with the crushed Weetbix and then store in an airtight container.
  9. Serve with 1 cup of milk and a drizzle of honey (optional).
