English Muffin Pizzas

These mini pizzas are so easy to make and healthier than regular pizza! Have 2-3 English Muffin Pizzas for your main meals (Breakfast, Lunch or Dinner) or have 1 English Muffin for a snack. Full of flavour and a great option when everyone you’re cooking for have different topping preferences. The more variety of vegetables you can load on to the pizza, the happier your gut and heart will be!
INGREDIENTS
- 2 wholemeal English muffins, split
- 4 tbsp tomato paste
- 1/2 tsp garlic powder
Toppings of your choice:
- Cherry tomatoes, cut in halves
- Mushrooms, sliced
- Shaved ham
- Mozzarella cheese, grated
- Poached chicken, shredded
- Spinach, shredded
- Capsicum, sliced
- Red onion, diced
METHOD
- Preheat oven to 200ºC. Line a baking tray with baking paper and arrange the muffin halves on it. Toast the muffins in the oven for 2 minutes.
- Take toasted muffins out of the oven. Spread tomato paste on each one and top with garlic powder.
- Top with desired toppings.
- Return to oven and bake for 10 minutes or until the cheese are bubbly and golden. Serve immediately. Enjoy!
