Brekkie Beans
Ingredients
• Can of cannellini (white) beans
• Can diced tomatoes
• 1 onion
• ½ tsp garlic
• ½ tsp cumin
• 1 tsp paprika
• 2 eggs
• extra virgin olive oil
• salt and pepper to season
Method
1. Finely dice the onion.
2. Heat olive oil in a frying pan on a medium heat.
3. Sauté onion for 1 min.
4. Add garlic, garlic, cumin, paprika then fry for 1 min.
5. Add canned tomatoes and beans, season with salt and pepper.
6. Cook for 5 mins or until mixture has thickened.
7. Make a well in the mixture with a wooden spoon then crack an egg in. Repeat with other egg.
8. Cover the pan with a lid (or oven tray if your fry pan doesn’t have a lid) and cook for 5-8mins – depending on how runny you like your eggs.
9. Serve with your choice of avocado, feta cheese, wholemeal toast or pita bread.
