Breakfast Burger

Breakfast • 10 Minutes • Serves: 1 • Cost: $2.20

Cooking food at home doesn't need to be bland. Cook the same breakfast burger you buy out for a fraction of the price! A perfectly balanced breakfast, with your source of protein from the egg, source of slow-releasing carbohydrate from a grain roll, healthy fats from the avocado and olive oil and colour from all of the veg. This will keep you feeling full all through the morning. Including delicious meals like these will keep you feeling motivated to continue eating healthily. 


INGREDIENTS

  • 1 wholemeal or wholegrain bun
  • 1 egg
  • 1 red onion
  • ¼ avocado
  • ¼ tomato (sliced)
  • Small handful of rocket/spinach
  • Chilli flakes
  • ½ tbsp extra virgin olive oil Sauce Ingredients 
  • 1 tsp red onion relish 
  • 1 tsp mayonnaise

METHOD

  1. Toast burger buns on a pan, remove. 
  2. Sauté sliced onions with oil. 
  3. Cook egg leaving yolk intact and season with chilli flakes 
  4. Spread avocado on the bottom of the burger bun, lay spinach/rocket on top followed by sliced tomato 
  5. Add onions on top of the tomato followed by the egg 
  6. Add relish and mayonnaise to the top of the burger bun, close the burger then enjoy!
