Beef and Bean Quesadilla

A delicious Mexican-inspired comforting lunch or dinner. With the addition of black beans, they’re packed with fibre for gut health and improved mood. They also work perfectly as leftovers!
INGREDIENTS
- 250g lean beef mince
- ½ packet of taco seasoning
- ½ brown onion (diced)
- 1 tbsp tomato paste
- 1 tbsp water
- 200g can of black beans (drained)
- 100g canned corn (drained)
- ½ avocado (mashed)
- 4 flour tortillas
- 100g low fat cheese (shredded)
- 1 tbsp olive oil
METHOD
- Heat pan over medium heat, add oil and diced onion. Saute until soft.
- Add the beef and break it up. Cook until brown.
- Season beef with taco seasoning.
- Mix in the tomato paste, water and cook for 2 minutes.
- Add the black beans, mix well and set aside.
- Spray the pan with oil, and over medium heat, add a tortilla.
- On one half of the tortilla sprinkle the cheese, the beef & beans, corn & avocado and top with more cheese.
- Fold tortilla over filling and fry on each side util the cheese is melted and filling heated through. Repeat with remaining tortillas.
