White Chocolate and Raspberry Overnight Weetbix

Having a balanced breakfast can set you up for an energising day. This recipe has adequate portions of carbohydrates for energy, protein for keeping you full for longer and antioxidants from the berries (+ an indulgence of the small amount of chocolate). It is just like a breakfast cheesecake!
INGREDIENTS
- 2 weetbix
- 80mL milk (of your choice)
- ¼ cup frozen raspberries (defrosted)
- ¾ cup of yoghurt (~180g) for layering + 1 tbsp yoghurt for topping
- 1 tbsp maple syrup
- 2 squares of white chocolate (melted)
METHOD
- Crush weetbix in a bowl.
- Add milk, mix together and smooth over for the base.
- Mash raspberries in a bowl.
- Spread raspberries over the base.
- In a separate bowl, mix yoghurt with maple syrup.
- Add yoghurt mixture on top of the raspberries and base, and smooth it over.
- For the topping, mix 2 square of melted chocolate with 1 tbsp of yoghurt until smooth.
- Spread the topping over the yoghurt.
- Add raspberries on top.
- Refrigerate for an hour or overnight.
