Mini Quiches

Snacks • 30 Minutes • Serves: 12 • Cost: $8.00 ($0.70 per Serve)

Prep these mini quiches at the beginning of the week for a healthy, satisfying snack. Filled with fibre from your favourite vegetables. They're also a great option to have as a ready-made breakfast. A snack portion would be 1-2 of these quiches, whereas for breakfast try having 3-4 to start your day. 


  • 6 large egg 
  • 130 mL cream 
  • 1/2 onion (diced) 
  • 2.5 sheets puff pastry 
  • 1 cup cheese (grated) 
  • Vegetables of your choice (finely diced): spinach, mushrooms, capsicum


  1. Preheat oven to 210C. 
  2. Grease muffin pan. 
  3. Using a fork or whisk, beat eggs, cream, onion, and salt and pepper in a bowl until well-combined. 
  4. In another bowl, combine vegetables. 
  5. Cut and line each muffin hole with pastry. Bake for 5-8 minutes. 
  6. Divide vegetables and cheese into muffin holes, and spoon in egg mixture. 
  7. Bake for 20-22 minutes.
