Loaded Hummus with Baked Pita Chips

Snacks • 10 mins • Serves: 4 • Cost: $8.10 approx. ($2/serve)

INGREDIENTS

  • 1 Wholemeal pita bread
  • 3/4 cup hummus
  • handful of Olives
  • ½ punnet cherry tomatoes
  • ½ cucumber
  • 1 small Capsicum
  • ¼ block feta
  • handful Parsley
  • pinch of Paprika
  • drizzle of olive oil

METHOD

  1. Preheat oven to 1800C (fan forced)
  2. Slice pita bread into triangles
  3. Bake for 8mins
  4. Slice tomatoes, cucumber, capsicums and olives into small pieces
  5. Smother a dish in hummus and sprinkle over paprika
  6. Layer sliced vege over top
  7. Drizzle in olive oil, season with salt and pepper
  8. Crumble over feta
  9. Chop parsley and sprinkle on top.

Serve!
