Crispy Feta Egg Taco

Breakfast • 5 Minutes • Serves: 1 • Cost: $1.50 Per Serve

A new way to eat eggs! Quick and easy, it takes only 5 minutes to make which is great for a busy morning. This breakfast is packed with protein and fibre to keep you feeling full all morning.  


INGREDIENTS

  • 1 tortilla (small)
  • 3 tbsp feta (crumbled) 
  • 1 egg
  • ¼ cup of spinach 
  • ¼ cup cherry tomatoes (quartered)
  • Chilli flakes
  • Salt and pepper 
  • ¼ avocado 
  • ¼ lime 

METHOD

  1. Add oil to a pan over medium heat. 
  2. Crumble feta on the outside of the pan. Sauté for a few minutes. 
  3. Crack an egg in the centre of the feta.
  4. Add chilli flakes, salt and pepper. Cook until the white is hard. 
  5. Warm a tortilla on another pan or microwave. 
  6. Spread avocado on cooked tortilla, squeeze a lime on top. 
  7. When egg is cooked, add on top of the tortilla with the spinach and cherry tomatoes.
