Crispy Feta Egg Taco

A new way to eat eggs! Quick and easy, it takes only 5 minutes to make which is great for a busy morning. This breakfast is packed with protein and fibre to keep you feeling full all morning.
INGREDIENTS
- 1 tortilla (small)
- 3 tbsp feta (crumbled)
- 1 egg
- ¼ cup of spinach
- ¼ cup cherry tomatoes (quartered)
- Chilli flakes
- Salt and pepper
- ¼ avocado
- ¼ lime
METHOD
- Add oil to a pan over medium heat.
- Crumble feta on the outside of the pan. Sauté for a few minutes.
- Crack an egg in the centre of the feta.
- Add chilli flakes, salt and pepper. Cook until the white is hard.
- Warm a tortilla on another pan or microwave.
- Spread avocado on cooked tortilla, squeeze a lime on top.
- When egg is cooked, add on top of the tortilla with the spinach and cherry tomatoes.
